Today I’m sharing with you my Pumpkin Pecan Pancakes recipe. I love these pancakes any time of year, but especially on a cool autumn weekend when the leaves are just beginning to turn color! They are really easy to throw together and are absolutely delish!
I came up with this recipe many years ago when I was actually still living in Florida. I had just finished processing my pumpkin into puree for the very first time. My small freezer was holding quite a few quart bags of the stuff. I quickly started brainstorming on what to do with it all. Pumpkin Pecan Pancakes seemed like a good start and they instantly became a household favorite.

Pumpkin Pecan Pancakes
Ingredients
- 1 ½ cups all-purpose flour
- 1 ½ Tbsp sugar
- 1 ½ Tbsp brown sugar
- 2 Tbsp baking powder
- 1 tsp salt
- 1 tsp cinnamon
- ⅛ tsp nutmeg
- ¼ tsp cloves
- 1 ½ cups milk
- ½ cup pumpkin puree
- 3 Tbsp butter melted
- 2 eggs
- ½ tsp vanilla extract
- ½ cup pecans chopped
Instructions
- First, whisk together the flour, sugar, brown sugar, baking powder, salt, and spices in a large bowl.
- In another bowl combine the pumpkin puree and milk. Follow it with the melted butter, eggs, and vanilla and whisk thoroughly until combined.
- Whisk the dry ingredients into the liquid ingredients until the batter is completely combined.
- Prepare pancakes as you usually would. I like to grease the pan with melted butter before each pancake.
- Sprinkle the chopped pecans on top of each pancake before flipping to cook the other side.
