Roasted Asparagus


  • 1 lb asparagus bottoms trimmed
  • 1 Tbsp extra virgin olive oil
  • 1 ½ tsp lemon juice freshly squeezed
  • ½ tsp garlic powder
  • parmesan cheese fresh
  • salt and pepper


  • Preheat the oven to 350°.
  • In a large mixing bowl, toss the asparagus together with the olive oil, lemon juice, garlic powder, freshly grated parmesan cheese, salt, and pepper.
  • Line a baking dish or roasting sheet pan with the asparagus stalks side by side in a single layer.
  • Roast for 20 to 25 minutes depending on the thickness of the asparagus stalks.
  • Remove from the oven and grate some more fresh parmesan over the asparagus, if desired, before serving.
